Chicken Greek Salad
- 1 pound of chicken breast
- greek seasoning
- Olive oil
- Cherry tomatoes
- red onion. sliced
- pitted olives
- cucumbers, cut into coins
- salad mix of your liking
- Feta cheese, crumbled
- Greek salad
- Preheat oven to 400 F, cover chicken in Greek seasoning with some olive oil. Bake the chicken for 25 minutes.
- While the chicken is baking, cut the vegetables as described above and place in a salad bowl.
- Take the temperature of the chicken and make sure it reaches 165 F. Once it does, set the chicken aside to cool for about 15 minutes.
- Cut the chicken into bite size pieces and then add to the salad bowl. Top with dressing.
- Enjoy!
