Creamy Jalapeño-Stuffed Chicken


Creamy Jalapeño-Stuffed Chicken

  • 2 lbs of chicken breast
  • 1 pkg. (8 oz.) of cream cheese, softened
  • 1 egg
  • 2 jalapeños
  • 3 cups of cheese
  • 1 cup of salsa verde
  • 3 cups of tortilla chips
Preheat oven to 375°F.

The jalapeños need to be seeded, veins removed and then diced.  Put aside.  Either filet your chicken breasts or manually pound the chicken until they are 1/4 inch thick.   

Put the softened cream cheese, 1 1/2 cups of cheese and diced jalapeños into a medium size mixing bowl. Mix them until well blended.  Spread the jalapeño mixture onto the chicken breast, roll and place them on a plate.  

Hand crunch the tortilla chips and place into a bowl.  Whisk one egg in a bowl by itself.  Now take one stuffed chicken at a time and dip in the egg, then roll in the crunched tortilla chips and place on a GREASED shallow baking pan.

Bake for 35 minutes.

Top with the salsa verde and shredded cheese, and enjoy!
