Creamy Jalapeño-Stuffed Chicken
- 2 lbs of chicken breast
- 1 pkg. (8 oz.) of cream cheese, softened
- 1 egg
- 2 jalapeños
- 3 cups of cheese
- 1 cup of salsa verde
- 3 cups of tortilla chips
Preheat oven to 375°F.
The jalapeños need to be seeded, veins removed and then diced. Put aside. Either filet your chicken breasts or manually pound the chicken until they are 1/4 inch thick.
Put the softened cream cheese, 1 1/2 cups of cheese and diced jalapeños into a medium size mixing bowl. Mix them until well blended. Spread the jalapeño mixture onto the chicken breast, roll and place them on a plate.
Bake for 35 minutes.
Top with the salsa verde and shredded cheese, and enjoy!
