Reuben

*Makes only one sandwich*
Ingredients:
  • 3 T Thousand Island Dressing
  • 2 slices rye bread
  • 4 to 6 slices of swiss cheese
  • 1 cup sauerkraut, drained and rinsed
  • 4 oz of left over corned beef
  • 1 tablespoon unsalted butter, softened

Prepare sandwich layer likes this:

Bread
Thousand Island dressing
Half cheese
Sauerkraut
All the meat
Half cheese
Thousand island dressing
Bread

Prepare it like a grilled cheese, in a nice hot pan.  Be sure to put a good layer of butter or even spray it with cooking oil on the outsides of the sandwich.  Careful when you flip.  If necessary, slightly press down for the cheese to make it sticky and then flip it. 

Cook until the bread is nice and crispy (the picture is too overcooked).  

On 2nd sandwich, cut back on the heat and add a lot more butter. You won't need as much time on each side for the 2nd, because the pan is super hot.
