Slow Cooker Shredded Chicken
Ingredients:
6 boneless skinless chicken breasts (I used frozen chicken breast)
4 cup chicken stock
3 tablespoons garlic powder
3 tablespoons onion powder
1/4 cup of seasoned salt
2 tablespoon of black pepper
2 tablespoons of oregano
(I used a 6 quart crock pot.)
Put the chicken stock and seasoning in the crock pot, mix it well until blended. Add chicken, and stir the chicken so each side gets some seasoning. Put the lid on and cook for 8 hours on LOW* (or 3 to 4 on HIGH).
*Usually slow cooker recipes recommend 6 hours on LOW for chicken recipes, but because I added 3 and 1/2 cups more liquid (the chicken was basically covered) - I could pull off 8 hours on LOW. If your chicken isn't mostly covered by liquid and you try to cook for 8 hours - the chicken may become dry.
Once it's done, pull the chicken out and cut it up on a cutting board, let it rest for about 20 minutes. Place in a gallon sized zip lock (freezer) bag. I placed them in the frig, with the bag open to let the steam out. Right before bed, I rolled the bag up to push the air out - and then sealed the bag. Place those bags in the freezer. I plan on making a few shredded chicken recipes in the near future.
